Preparing the Sushi

    Cook the Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. In a rice cooker or pot, combine the rinsed rice with 2.5 cups of water and cook according to the rice cooker instructions or until tender. Once cooked, let it sit for 10 minutes.

    Season the Rice

    In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice while it's still warm. Let the rice cool to room temperature.

    Prepare the Shrimp

    In a small saucepan, bring water to a boil. Add the shrimp and boil for about 2-3 minutes until they turn pink and are cooked through. Drain and let cool.

    Assemble the Roll

    Lay a nori sheet on a bamboo sushi mat, shiny side down. Wet your hands and take about 1/2 cup of sushi rice, spreading it evenly over the nori, leaving a 1-inch border at the top. Place shrimp, avocado slices, and smoked tuna on top of the rice. Sprinkle with tobiko.

    Roll the Sushi

    Using the mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll. Seal the edge of the nori with a bit of water. Repeat with the remaining ingredients.

    Slice and Serve

    Using a sharp knife, slice the rolls into bite-sized pieces. Serve with soy sauce and wasabi on the side.
