Prepare Sushi Rice

    Rinse the Rice

    Rinse the sushi rice under cold water until the water runs clear to remove excess starch.

    Cook the Rice

    Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer's instructions.

    Season the Rice

    Once cooked, transfer rice to a large bowl. Mix rice vinegar, sugar, and salt in a small bowl and fold into the rice until evenly coated. Allow to cool to room temperature.

Prepare Filling

    Prepare Ingredients

    In a bowl, combine crabmeat, diced avocado, cream cheese, and chopped green onions. Mix gently until combined.

Assemble the Rolls

    Lay Nori

    Place a sheet of nori on a bamboo sushi mat, shiny side down.

    Spread Rice

    Wet your hands (to prevent sticking) and take a handful of sushi rice, spreading it evenly over the nori, leaving about 1 inch at the top.

    Add Filling

    Spread a line of the crabmeat and avocado mixture across the center of the rice.

    Roll Sushi

    Using the mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll. Seal the edge of the nori with a little water.

    Add Masago

    Once rolled, gently press the roll into a plate of masago to coat the outside.

    Slice and Serve

    Using a sharp knife, slice the roll into 6-8 pieces. Serve with soy sauce and wasabi.
