    Rinse the sushi rice under cold water until the water runs clear. In a pot, combine the rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes. Remove from heat and let it sit, covered, for 10 minutes.

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice using a wooden spatula. Allow the rice to cool to room temperature.

    Prepare the Filling

    Slice the avocado in half, remove the pit, and scoop the flesh out. Cut the avocado into thin strips. Slice the cucumber into thin matchsticks.

Rolling

    Assemble the Roll

    Place a bamboo sushi mat on a clean surface. Lay a sheet of nori, shiny side down, on the mat. Wet your hands and spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top edge.

    Arrange a few strips of avocado and cucumber in the center of the rice-covered nori.
