Prepare the Tofu
Drain the tofu and wrap it in a clean kitchen towel. Place a weight on top and let it sit for about 30 minutes to remove excess moisture.

Cut the Tofu
After draining, cut the tofu into 1-inch cubes.

Coat in Cornstarch
Place the cornstarch in a shallow dish and coat each piece of tofu evenly.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Tofu
Carefully add the tofu cubes to the hot oil in batches. Fry until golden brown and crispy, about 3-4 minutes. Remove with a slotted spoon and drain on paper towels.

Make the Sauce
In a small saucepan, combine dashi stock, soy sauce, and mirin. Bring to a gentle simmer and stir until heated through.

Serve the Tofu
Place the fried tofu in a serving dish. Pour the warm sauce over the tofu and garnish with sliced green onions, grated daikon, and bonito flakes. Serve with wasabi or chili oil on the side.
