Prepare the Ingredients
Slice the boneless chicken breast into thin strips. Chop the onion, garlic, and bell pepper.

Cook the Rice
In a pot, bring 2 cups of water to a boil. Add 1 cup of rice, cover, and reduce heat to low. Cook for about 15-20 minutes until the rice is tender and water is absorbed.

Sauté the Chicken
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and garlic, sauté until fragrant.

Add Chicken and Vegetables
Add the sliced chicken to the skillet. Season with salt and black pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes. Add the chopped bell pepper and cook for another 2-3 minutes until softened.

Add Kaskaval Cheese
Sprinkle the kaskaval cheese on top of the chicken and cover the skillet. Allow the cheese to melt for about 2-3 minutes.

Serve
Fluff the cooked rice with a fork and serve it on plates topped with the chicken and melted cheese.
