    Marinate the Meat

    In a large bowl, combine the cubed lamb or beef with onion, garlic, cumin, coriander, paprika, salt, black pepper, and olive oil. Mix well and let it marinate for at least 1 hour, preferably overnight in the fridge.

    Prepare the Skewers

    If using wooden skewers, soak them in water for about 30 minutes. Thread the marinated cubed meat onto the skewers, leaving some space between each piece.

    Grill the Skewers

    Preheat the grill to medium-high heat. Grill the skewers for about 10-12 minutes, turning occasionally, until the meat is cooked through and has nice grill marks.

    Prepare the Doner Mix

    While the skewers are grilling, take the ground lamb or beef and form it into a loaf shape. Grill or bake it in the oven at 200°C (400°F) for about 15-20 minutes, until fully cooked.

    Slice the Doner

    Once the ground meat is cooked, remove it from the grill or oven and let it rest for a few minutes. Then, slice it thinly.

    Assemble the Sis-Doner

    To serve, place the grilled skewers and sliced doner on pita bread or flatbread. Top with fresh vegetables and drizzle with yogurt sauce or tahini.
