Marinate the Chicken
In a bowl, combine the boneless chicken thighs, grated onion, minced garlic, ground cumin, paprika, salt, black pepper, and olive oil. Mix well and allow to marinate for at least 30 minutes.

Prepare the Lamb Mixture
In a separate bowl, combine the ground lamb, grated onion, minced garlic, ground cumin, paprika, salt, and black pepper. Mix until well combined.

Form the Doner Kebab
Shape the lamb mixture into a loaf. Wrap it in plastic wrap and refrigerate for 30 minutes to firm up.

Prepare the Skewers
Soak the wooden skewers in water for 30 minutes to prevent burning.

Assemble the Shish Kebab
Thread the marinated chicken onto the soaked skewers, alternating with pieces of vegetables if desired (bell peppers, onions).

Cook the Kebabs
Preheat a grill or grill pan over medium-high heat. Cook the shish kebabs for about 10-12 minutes, turning occasionally until cooked through.

Cook the Doner
Preheat the oven to 200°C (400°F). Place the lamb loaf on a baking tray and bake for 25-30 minutes until cooked through. Let it rest for 10 minutes before slicing thinly.

Serve the shish kebabs alongside the sliced doner kebab with pita bread, salad, and sauces.
