    Prepare the Vegetables

    Wash and chop the green beans, eggplant, zucchini, potatoes, bell peppers, tomatoes, and carrots into bite-sized pieces.

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the carrots first and sauté for about 5 minutes until they start to soften. Then add the eggplant, zucchini, and bell peppers, and cook for another 5-7 minutes.

    Combine Ingredients

    In a large earthenware casserole dish, combine the sautéed vegetables with the green beans, chopped tomatoes, salt, black pepper, and thyme. Mix well to ensure all ingredients are coated with the seasoning.

    Bake the Dish

    Cover the casserole dish with a lid or aluminum foil and bake in a preheated oven at 180°C (350°F) for 40-45 minutes, or until the vegetables are tender.

    Garnish and Serve

    Once baked, remove from the oven, uncover, and let it sit for a few minutes. Garnish with fresh parsley before serving.
