    Prepare the Vegetables

    Start by washing and peeling the eggplants. Cut them into small cubes and soak them in salted water for about 15 minutes to reduce bitterness. Drain and set aside.

    Cook the Eggplants

    In a large pan, heat 2 tablespoons of olive oil over medium heat. Add the eggplant cubes and sauté for about 8-10 minutes until they are soft and golden. Remove the eggplants from the pan and set aside.

    Make the Sauce

    In the same pan, add the remaining olive oil. Sauté minced garlic until fragrant, about 1 minute. Then, add chopped tomatoes and diced red bell peppers. Cook for about 10 minutes until the tomatoes break down and the mixture thickens.

    Combine Ingredients

    Add the sautéed eggplants back into the pan with the tomato and pepper mixture. Season with salt and black pepper to taste. Stir well to combine and cook for an additional 5 minutes.

    Serve

    Remove from heat, garnish with chopped fresh parsley, and serve warm as a side dish or over rice.
