1. Prepare the Lamb
Season the lamb shanks with salt and black pepper.
2. Sear the Lamb
In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the lamb shanks and sear on all sides until browned. Remove from the pot and set aside.
3. Sauté Vegetables
In the same pot, add the chopped onion, garlic, carrot, and celery. Sauté until the vegetables are softened, about 5-7 minutes.
4. Deglaze the Pot
Stir in the tomato paste and cook for 1 minute. Pour in the red wine, scraping the bottom of the pot to deglaze.
5. Add Broth and Herbs
Return the lamb shanks to the pot. Add the beef or lamb broth, rosemary, and thyme. Bring to a simmer.
6. Slow Cook
Cover the pot and reduce the heat to low. Let it cook for 2 to 3 hours, or until the lamb is tender and falling off the bone.
7. Serve
Remove the lamb shanks from the pot and let them rest for a few minutes. Serve with the sauce poured over the top.
