    Prepare the Ingredients

    Chop the onions, carrots, and tomatoes. Mince the garlic cloves.

    Sear the Lamb

    In a large pot, heat olive oil over medium-high heat. Season the lamb knuckle with salt and pepper. Sear the lamb on all sides until browned.

    Add Vegetables

    Add the chopped onions, minced garlic, and carrots to the pot. Sauté for about 5 minutes until the vegetables begin to soften.

    Add Tomatoes and Stock

    Stir in the chopped tomatoes, lamb stock (or water), bay leaves, rosemary, and thyme. Bring to a simmer.

    Slow Cook

    Cover the pot and reduce the heat to low. Let it cook for about 2 to 2.5 hours, or until the lamb is tender and falling off the bone.

    Serve

    Remove the lamb from the pot and let it rest for a few minutes. Serve with the sauce and vegetables.
