    Prepare the Rice

    In a medium saucepan, add the uncooked rice, water, and salt. Bring to a boil over medium heat. Once boiling, reduce the heat to low, cover, and simmer for 15-18 minutes or until the rice is cooked and water is absorbed. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the bell pepper, zucchini, and carrot. Sauté for 5-7 minutes until the vegetables are tender.

    Cook the Shrimp

    Add the shrimp to the skillet along with black pepper. Cook for 3-5 minutes, stirring occasionally, until the shrimp turn pink and opaque.

    Combine and Serve

    Remove the skillet from heat and sprinkle the sautéed shrimp and vegetables with chopped parsley. Serve the shrimp sauté over a bed of rice and top with grated kaskaval cheese.
