Filling and Dough

Method

Preparation Steps

  1. 1

    Prepare the Bulgur

In a large bowl, combine the fine bulgur wheat with 1 cup of water. Let it soak for about 30 minutes, or until the bulgur absorbs the water and becomes tender.

  2. 2

    Make the Filling

In a skillet over medium heat, add olive oil and sauté the chopped onion until translucent. Add the ground lamb, pine nuts, cumin, cinnamon, salt, and pepper. Cook until the lamb is browned and cooked through. Remove from heat and let it cool.

  3. 3

    Prepare the Dough

Once the bulgur is ready, mix in the melted butter and flour. Knead the mixture until it forms a smooth dough. If the dough is too sticky, add a little more flour.

  4. 4

    Assemble the Kibbeh

Take a small piece of dough and flatten it in your palm. Add a spoonful of the filling in the center and carefully fold the dough around it, sealing it completely. Shape it into an oval or football shape.

  5. 5

    Cook the Kibbeh

In a pot of boiling water, drop the prepared kibbeh and cook for about 10-15 minutes, or until they float to the surface. Alternatively, you can deep-fry them until golden brown.

  6. 6

    Serve

Serve hot with a side of yogurt or salad.
