Falafel Preparation

    Soak Chickpeas

    Place the dried chickpeas in a bowl and cover with water. Soak overnight or for at least 8 hours.

    Prepare the Mixture

    Drain and rinse the soaked chickpeas. In a food processor, combine the chickpeas, broad beans, onion, garlic, parsley, cilantro, cumin, coriander, baking powder, salt, and black pepper. Pulse until a coarse mixture forms, scraping down the sides as needed.

    Form the Balls

    Using your hands, shape the mixture into small balls or patties, about 1.5 inches in diameter.

    Heat the Oil

    In a deep skillet or pot, heat the olive oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Falafel

    Carefully drop the formed falafel balls into the hot oil, working in batches to avoid overcrowding. Fry for about 3-4 minutes on each side, or until golden brown and crispy.

    Drain and Serve

    Remove the falafel from the oil and drain on paper towels. Serve warm with tahini sauce, pita, and fresh vegetables.
