Preparation and Cooking Instructions

    Preparing the Ribs

    Preheat your grill or smoker to 225°F (107°C). Season the St. Louis ribs and Fulton St. ribs generously with your favorite BBQ rub. Place them on the grill bone side down and cook for 4-5 hours, or until the meat is tender and pulls away from the bone easily.

    Cooking the BBQ Chicken

    Season the BBQ chicken with salt and pepper. Grill or smoke over medium heat until fully cooked, about 1-1.5 hours, or until internal temperature reaches 165°F (74°C). Baste with BBQ sauce during the last 30 minutes of cooking.

    Preparing the Brisket

    Rub the brisket with salt, pepper, and any other spices you prefer. Smoke or slow cook at 225°F (107°C) for about 10-12 hours until it’s tender and reaches an internal temperature of 195°F (90°C). Let it rest before slicing.

    Grill the sausage links over medium heat until cooked through and browned, about 15-20 minutes.

    Frying the Chicken Wings

    Deep fry or bake the chicken wings until crispy and cooked through, about 10-12 minutes at 375°F (190°C). Toss in your favorite wing sauce.

    Making the Chimichangas

    Fill tortillas with a mixture of beans, cheese, and meat of choice. Roll tightly and fry until golden brown and crispy.

    Serving the Red Beans

    Prepare red beans by boiling them until tender, season with spices and serve in a bowl.

    Plating

    Arrange all components on a large platter: St. Louis ribs, Fulton St. ribs, BBQ chicken, brisket, sausage links, chicken wings, chimichangas, and bowl of red beans. Serve with extra BBQ sauce on the side.
