Brining the Turkey
Prepare a brine solution by mixing kosher salt, brown sugar, and water in a large container until dissolved. Submerge the turkey in the brine and refrigerate for 12-24 hours.

Prepare the Turkey for Smoking
Remove the turkey from the brine, rinse it under cold water, and pat it dry with paper towels. Rub the turkey with olive oil and season with black pepper, paprika, garlic powder, and onion powder.

Prepare the Smoker
Soak the wood chips in water for at least 30 minutes. Preheat your smoker to 225°F (107°C) and add the soaked wood chips.

Smoking the Turkey
Place the turkey in the smoker breast side up. Smoke the turkey for about 30-40 minutes per pound, or until the internal temperature reaches 165°F (74°C).

Resting the Turkey
Once done, remove the turkey from the smoker and let it rest for at least 30 minutes before carving.
