    Prepare the Ribs

    Remove the membrane from the back of the ribs, then rinse and pat dry.

    Make the Rub

    In a bowl, combine smoked paprika, brown sugar, garlic powder, onion powder, black pepper, and salt to create the dry rub.

    Season the Ribs

    Rub the mustard all over the ribs, then apply the dry rub generously on both sides. Let the ribs marinate for at least 1 hour, preferably overnight.

    Prepare the Smoker

    Preheat your smoker to 225°F (107°C) and add wood chips of your choice for smoking.

    Smoke the Ribs

    Place the ribs in the smoker and smoke for 4-5 hours, spraying with apple cider vinegar every hour.

    Finish with Barbecue Sauce

    In the last 30 minutes of cooking, brush barbecue sauce on the ribs. Continue to smoke until the ribs are tender and the sauce is caramelized.

    Serve

    Remove the ribs from the smoker, let them rest for a few minutes, then slice and serve.
