    Prepare the Ingredients

    Gather all ingredients and dice the bell pepper, onion, and jalapeño.

    Sauté Vegetables

    In a skillet over medium heat, melt the butter. Add the diced bell pepper, onion, and jalapeño. Sauté for about 3-4 minutes until the vegetables are tender.

    Add Pulled Pork

    Stir in the slow smoked pulled pork and cook for an additional 2 minutes until heated through. Remove the mixture from the skillet and set aside.

    Whisk Eggs

    In a bowl, whisk the eggs with salt and black pepper until well combined.

    Cook the Omelet

    Pour the egg mixture into the same skillet over medium heat. Allow it to cook undisturbed for 2-3 minutes until the edges start to set.

    Add Filling

    Once the edges are set, add the sautéed vegetable and pulled pork mixture onto one half of the omelet. Sprinkle shredded cheddar cheese on top.

    Fold and Serve

    Carefully fold the omelet in half and cook for another minute until the cheese melts. Slide the omelet onto a plate and serve warm.
