Prepare the Brisket
Trim excess fat from the brisket and season it generously with the BBQ rub, salt, black pepper, garlic powder, and onion powder. Let it sit at room temperature for about 30 minutes.

Prepare the Smoker
Soak the wood chips in water for at least 30 minutes. Preheat your smoker to 225°F (107°C) and add the soaked wood chips.

Smoke the Brisket
Place the seasoned brisket in the smoker and cook for about 1.5 to 2 hours per pound, or until the internal temperature reaches 195°F (90°C).

Prepare the Au Jus
In a saucepan, heat the beef broth over medium heat. Once the brisket is done, reserve the drippings and combine them with the beef broth to enhance the flavor.

Rest the Brisket
Remove the brisket from the smoker and let it rest for at least 30 minutes before slicing.

Serve
Slice the brisket against the grain into 10oz portions. Serve it on a platter with au jus and your choice of two house sides.
