Prepare the filling
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add diced onions and sauté until translucent, about 3-4 minutes.

Mix in cheese
Remove the skillet from heat and stir in the shredded cheddar and Monterey Jack cheeses until melted. Set aside.

Cook the omelet
In a separate non-stick skillet, heat the remaining tablespoon of olive oil over medium heat. Whisk the eggs in a bowl and pour into the skillet, cooking for about 2-3 minutes until the edges start to set.

Add filling
Spoon the seafood mixture onto one half of the omelet and fold the other half over the filling. Cook for an additional 2-3 minutes until the omelet is fully cooked through.

Serve
Transfer the omelet to a plate, top with lump crab meat, and garnish with chopped fresh parsley. Serve immediately.
