Seafood Stuffed Omelet Ingredients

Method

Cooking Directions

  1. 1

    Prepare the filling

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add diced onions and sauté until translucent, about 3-4 minutes.

  2. 2

    Add seafood

Add shrimp and crawfish to the skillet, season with salt and black pepper, and cook until shrimp are pink and cooked through, about 4-5 minutes. Add sliced mushrooms and continue to sauté for an additional 2-3 minutes.

  3. 3

    Mix in cheese

Remove the skillet from heat and stir in the shredded cheddar and Monterey Jack cheeses until melted. Set aside.

  4. 4

    Cook the omelet

In a separate non-stick skillet, heat the remaining tablespoon of olive oil over medium heat. Whisk the eggs in a bowl and pour into the skillet, cooking for about 2-3 minutes until the edges start to set.

  5. 5

    Add filling

Spoon the seafood mixture onto one half of the omelet and fold the other half over the filling. Cook for an additional 2-3 minutes until the omelet is fully cooked through.

  6. 6

    Serve

Transfer the omelet to a plate, top with lump crab meat, and garnish with chopped fresh parsley. Serve immediately.
