    Prepare the Rub

    In a small bowl, mix together the paprika, brown sugar, garlic powder, onion powder, cayenne pepper, salt, and black pepper to create the spice rub.

    Season the Pork

    Rub the spice mixture all over the pork shoulder, making sure to coat it thoroughly. Wrap in plastic wrap and refrigerate for at least 2 hours, preferably overnight.

    Preheat the Smoker

    Preheat your smoker to 225°F (107°C).

    Cook the Pork

    Place the seasoned pork shoulder in the smoker, fat side up. Smoke for about 8-12 hours, or until the internal temperature reaches 195°F (90°C) and the meat is tender.

    Add Liquid

    During the last hour of cooking, mix the apple cider vinegar and water. Spray or mop this mixture over the pork occasionally to keep it moist.

    Rest and Shred

    Once done, remove the pork from the smoker and let it rest for at least 30 minutes. Then, use two forks to shred the meat into bite-sized pieces.

    Serve

    Toss the shredded pork with BBQ sauce and serve on buns, in tacos, or alone. Enjoy!
