    Gather all the ingredients and choose your preferred meat (brisket, pulled pork, burnt ends, or bacon). Shred or chop the meat into bite-sized pieces.

    In a bowl, crack the eggs and whisk them together with salt and black pepper until well combined.

    Heat the Pan

    In a non-stick skillet, heat butter or oil over medium heat until melted and hot.

    Cook the Eggs

    Pour the beaten eggs into the skillet, tilting the pan to spread them evenly. Cook for about 2-3 minutes until the edges begin to set.

    Sprinkle the shredded cheddar and Monterey Jack cheese over one half of the omelet, followed by your choice of cooked meat.
