Make the Ice Cream Base
In a medium saucepan, combine the heavy cream, whole milk, sugar, and salt. Heat over medium heat until the sugar dissolves and the mixture is warm, but not boiling.

Combine and Thicken
Pour the tempered yolk mixture back into the saucepan with the remaining cream mixture. Cook over low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon (about 170°F or 77°C).

Add Vanilla Extract
Remove the saucepan from heat and stir in the vanilla extract. Allow the mixture to cool to room temperature, then refrigerate for at least 4 hours or overnight.

Churn the Ice Cream
Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

Freeze
Transfer the ice cream to an airtight container and freeze for at least 4 hours until firm.

Scoop out the ice cream and serve it plain or topped with chocolate, strawberry, or blueberry sauce as desired.
