Prepare the Shrimp
In a medium bowl, soak the popcorn shrimp in buttermilk for about 30 minutes.

Prepare the Breading
In another bowl, combine the flour, cornmeal, and Cajun seasoning. Mix well.

Bread the Shrimp
Remove the shrimp from the buttermilk, allowing excess to drip off. Dredge the shrimp in the flour mixture, ensuring they are well-coated.

Fry the Shrimp
In a large pot or deep fryer, heat the vegetable oil over medium-high heat. Once hot, fry the coated shrimp in batches until golden brown and crispy, about 2-3 minutes per batch. Remove and drain on paper towels.

Assemble the Po'boys
Slice the French bread loaves in half. Layer the bottom with shredded lettuce, sliced tomatoes, and pickles. Pile the fried shrimp generously on top, and drizzle with remoulade sauce.
