Prepare the Remoulade Sauce
In a small bowl, mix 1 cup of mayonnaise, 2 tablespoons of Dijon mustard, 1 tablespoon of Cajun seasoning, 1 tablespoon of lemon juice, and salt to taste. Refrigerate until ready to serve.

Make the Beer Batter
In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and cayenne pepper. Gradually whisk in the beer until the batter is smooth.

Heat the Oil
In a deep pot or fryer, heat the vegetable oil to 350°F (175°C).

Fry the Pickles
Dip the sliced pickles into the beer batter, allowing the excess to drip off. Carefully place the battered pickles into the hot oil and fry in batches until golden brown, about 2-3 minutes per side.

Drain and Serve
Remove the fried pickles from the oil and drain on paper towels. Serve hot with the Cajun remoulade sauce on the side.
