Prepare the Brisket
Preheat your smoker to 225°F (107°C). Rub the beef brisket with olive oil, then season generously with salt, black pepper, smoked paprika, garlic powder, and onion powder. Make sure to coat all sides of the brisket.

Smoke the Brisket
Place the brisket in the smoker and cook for approximately 1.5 hours per pound, or until the internal temperature reaches 203°F (95°C). This should take about 4 to 5 hours.

Rest the Brisket
Once the brisket is done, remove it from the smoker and let it rest for at least 30 minutes before chopping. This allows the juices to redistribute.

Chop and Sauce
After resting, chop the brisket into bite-sized pieces. In a large bowl, combine the chopped beef with the homemade BBQ sauce, mixing well to coat the meat evenly.
