Cheesecake Preparation

    Prepare the crust

    Preheat your oven to 325°F (160°C). In a medium bowl, combine the graham cracker crumbs and melted unsalted butter. Mix until fully combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even crust. Bake for 10 minutes, then remove from the oven and let cool.

    Make the filling

    In a large mixing bowl, beat the cream cheese until smooth and creamy. Gradually add the granulated sugar and continue to beat until well combined. Add the sour cream and vanilla extract, mixing until smooth. Add the eggs one at a time, mixing just until combined after each addition.

    Combine and bake

    Pour the cream cheese mixture over the cooled crust in the springform pan. Bake in the preheated oven for 50-60 minutes, or until the center is set and the edges are slightly puffed. The center may still jiggle slightly but will firm up as it cools.

    Cool and refrigerate

    Turn off the oven and crack the oven door slightly. Let the cheesecake cool in the oven for about 1 hour, then remove it from the oven. Cover and refrigerate for at least 4 hours, preferably overnight.

    Before serving, top with strawberries or drizzle with chocolate sauce according to your preference. Slice and enjoy!
