Marinate the Catfish
In a large bowl, soak the catfish fillets in buttermilk for at least 30 minutes to tenderize and flavor the fish.

Prepare the Breading
In a shallow dish, combine cornmeal, flour, cajun seasoning, salt, and black pepper. Mix well.

Bread the Catfish
Remove the catfish from the buttermilk, allowing excess to drip off. Dredge each fillet in the cornmeal mixture, pressing lightly to adhere.

Heat the Oil
In a large skillet, heat vegetable oil over medium-high heat until hot (about 350°F or 175°C).

Fry the Catfish
Carefully add the breaded catfish fillets to the hot oil, frying in batches if necessary. Cook for about 4-5 minutes on each side until golden brown and crispy.

Drain and Serve
Once cooked, remove the catfish from the skillet and drain on paper towels. Serve hot with your favorite sides.
