Prepare the Chicken
Preheat your oil in a deep skillet over medium-high heat. Season chicken tenders with salt and pepper. Dredge each chicken tender in flour, dip in beaten eggs, then coat with panko breadcrumbs.

Fry the Chicken
Carefully place the breaded chicken tenders in the hot oil. Fry for about 5-7 minutes or until golden brown and cooked through. Remove from oil and let drain on paper towels.

Coat with Buffalo Sauce
Once the chicken tenders are cooked, toss them in a bowl with the buffalo sauce until well coated.

In a large bowl, combine mixed greens, crumbled bacon, diced tomatoes, and sliced red onion. Drizzle with olive oil and toss to combine.
