    Prepare the Brisket

    Trim excess fat from the brisket point, leaving about 1/4 inch of fat for flavor. Rub the BBQ rub all over the brisket, ensuring an even coating.

    First Smoke

    Preheat your smoker to 225°F (107°C). Add the wood chips to the smoker. Place the brisket in the smoker and smoke for 6-8 hours until it reaches an internal temperature of 165°F (74°C).

    Wrap and Rest

    Remove the brisket from the smoker and wrap it tightly in foil. Let it rest for 1 hour to retain moisture.

    Cut into Cubes

    After resting, cut the brisket into 1-inch cubes.

    Second Smoke

    Return the brisket cubes to the smoker, adding more wood chips if necessary. Brush the cubes with BBQ sauce and smoke for an additional 1-2 hours until caramelized and tender.

    Serve

    Remove from the smoker, toss with remaining BBQ sauce if desired, and serve hot.
