Prepare the Filling
In a mixing bowl, combine the chopped smoked beef, shredded Monterey Jack cheese, and chopped green onions. Mix well.

Assemble the Quesadillas
Lay a flour tortilla flat on a clean surface. Spread a generous amount of the beef and cheese mixture on half of the tortilla. Fold the tortilla over to enclose the filling.

Cook the Quesadillas
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Place one or two quesadillas in the skillet (depending on size). Cook for about 3-4 minutes on each side, or until golden brown and the cheese is melted. Remove from skillet and keep warm. Repeat with remaining quesadillas, adding more olive oil as needed.

Serve
Cut the quesadillas into wedges and serve with sour cream, salsa, and chopped cilantro on the side.
