Preparation Steps

    Prepare the Chicken

    Rinse the whole chicken under cold water and pat it dry with paper towels. Cut the chicken in half along the backbone and remove the backbone.

    Season the Chicken

    Rub the chicken halves with salt, black pepper, garlic powder, onion powder, and paprika evenly on both sides.

    Preheat the Smoker

    Preheat your smoker to 225°F (107°C) using your choice of wood chips for smoking.

    Smoke the Chicken

    Place the chicken halves in the smoker, skin side up, and smoke for about 2 to 2.5 hours, or until the internal temperature reaches 165°F (74°C).

    Glaze with BBQ Sauce

    During the last 30 minutes of smoking, brush the chicken halves with BBQ sauce, allowing it to caramelize and form a nice glaze.

    Rest and Serve

    Remove the chicken from the smoker and let it rest for about 10 minutes before serving. Serve with baked beans on the side.
