Prepare the Shrimp
Heat the oil in a deep skillet over medium heat. Season the popcorn shrimp with salt and black pepper. Once the oil is hot, fry the shrimp in batches until golden and crispy, about 3-4 minutes per batch. Remove and drain on paper towels.

Toast the Rolls
While the shrimp are frying, slice the French rolls in half and toast them lightly in a toaster or on a skillet until golden brown.

Assemble the Po' Boys
Spread a generous amount of tartar sauce on the bottom half of each toasted roll. Layer with fried popcorn shrimp, followed by lettuce and slices of tomato. Top with the other half of the roll.

Serve immediately with extra tartar sauce on the side.
