Prepare the Fish
In a bowl, whisk together the flour, cornmeal, baking powder, salt, black pepper, and cayenne pepper.
Heat the Oil
In a large frying pan, heat the vegetable oil over medium-high heat until hot.
Coat and Fry the Fish
Dip each fish fillet into the batter, allowing excess to drip off, then carefully place in the hot oil. Fry until golden brown and cooked through, about 4-5 minutes per side. Remove and drain on paper towels.
Toast the Rolls
While the fish is frying, slice the French rolls in half and toast them lightly on the grill or in a toaster.
Assemble the Po' Boys
Spread tartar sauce on the toasted rolls. Add a layer of lettuce, followed by the fried fish fillets and sliced tomatoes. Top with more tartar sauce if desired.
Serve
Serve immediately while hot and crispy.
