Preparation and Assembly

Roasting the Beef

Preheat the oven to 300°F (150°C). Rub the beef roast with olive oil, salt, and black pepper. Place it in a roasting pan.

Slice the jalapenos and onion and scatter them over the roast. Cover the pan with foil and roast in the preheated oven for 3 to 4 hours, or until the beef is tender and easily shredded.

Making the Gravy

Once the beef is done, remove it from the pan and let it rest. Strain the juices from the roasting pan into a saucepan. Simmer over medium heat until slightly thickened, about 10 minutes.

Assembling the Po' Boys

Shred the beef and place it back in the roasting juices. Slice the French bread rolls in half and fill each with the beef mixture. Top with melted mozzarella cheese.

Toast the sandwiches in an oven or on a grill until the cheese is melted and bubbly. Serve with warm brown gravy on the side.
