Preparation and Assembly

    Prepare the Shrimp

    Preheat the grill. Toss the jumbo shrimp with olive oil, salt, and black pepper. Grill the shrimp for about 2-3 minutes on each side until they are pink and opaque.

    Grill the Onion

    Slice the onion into thick rings. Brush with olive oil and season with salt and black pepper. Grill until tender and slightly charred, about 5 minutes.

    Make the Spicy Pepper Jack Cream Sauce

    In a saucepan, melt the butter over medium heat. Add minced garlic and sauté until fragrant. Pour in the heavy cream, then stir in the Cajun seasoning, salt, and black pepper. Let it simmer for 5 minutes. Stir in the Pepper Jack cheese until melted and smooth.

    Assemble the Po' Boy

    Slice the French bread or Po' Boy rolls in half. Layer the grilled shrimp and onions on the bottom half, drizzle with the spicy Pepper Jack cream sauce, and top with shredded mozzarella cheese.

    Place the assembled Po' Boys under a broiler for 1-2 minutes until the mozzarella is melted and bubbly.
