Prepare the Oysters

In a bowl, whisk together the egg and milk. In another bowl, combine cornmeal, flour, salt, black pepper, and cayenne pepper.

Coat the Oysters

Dip each oyster into the egg mixture, then dredge in the cornmeal mixture until fully coated.

Fry the Oysters

Heat vegetable oil in a deep skillet over medium-high heat. Fry oysters in batches until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

Prepare the Rolls

While the oysters are frying, slice the French rolls and toast them lightly.

Assemble the Po' Boys

Spread tartar sauce on the inside of each toasted roll. Add shredded lettuce, fried oysters, and sliced tomatoes. Top with more tartar sauce if desired.

Serve

Serve immediately while hot and enjoy your Oyster Po' Boy!
