1. Prepare the Boudin
Preheat your grill to medium heat. Grill the jalapeno boudin link for about 8-10 minutes, turning occasionally until heated through and slightly charred.
2. Melt the Cheese
While the boudin is grilling, slice the mozzarella cheese into thin slices. In the last few minutes of grilling, place the cheese on top of the boudin to melt.
3. Prepare the Roll
Slice the French rolls in half and lightly brush the insides with olive oil. Toast them on the grill for 1-2 minutes until golden brown.
4. Assemble the Po' Boy
On the bottom half of each toasted roll, add a layer of lettuce and slices of tomato. Place the grilled boudin with melted mozzarella on top of the vegetables. Add salt and black pepper to taste, and close the sandwich with the top half of the roll.
5. Serve
Cut the po' boys in half if desired and serve immediately while hot.
