Grilled Boudin Po' Boy Recipe
House made jalapeno boudin grilled and topped with gooey chewy grilled mozzarella. Served on a toasted French roll with lettuce and tomato.

Melt the Cheese
While the boudin is grilling, slice the mozzarella cheese into thin slices. In the last few minutes of grilling, place the cheese on top of the boudin to melt.
Assemble the Po' Boy
On the bottom half of each toasted roll, add a layer of lettuce and slices of tomato. Place the grilled boudin with melted mozzarella on top of the vegetables. Add salt and black pepper to taste, and close the sandwich with the top half of the roll.
Serve
Cut the po' boys in half if desired and serve immediately while hot.
