Redfish Tacos Recipe
Two colossal flour taco shells stuffed with melted mozzarella, cabbage slaw and grilled redfish. Served with Mexican rice, charro beans, mango-pineapple pico, and a side of jalapeno ranch.

Prepare the Fish
Season the redfish fillets with salt, pepper, and any additional spices you prefer. Grill over medium heat for about 4-5 minutes on each side or until cooked through. Remove from heat and flake into pieces.

Make the Cabbage Slaw
In a large bowl, combine shredded cabbage with a little lime juice, salt, and pepper. Mix well and set aside.

Prepare the Pico de Gallo
In a medium bowl, combine diced mango and pineapple. Mix gently and set aside.

Assemble the Tacos
Warm the flour taco shells. In each shell, layer the grilled redfish, mozzarella cheese, and cabbage slaw. Top with mango-pineapple pico.

Serve
Serve the tacos with a side of Mexican rice, charro beans, and jalapeno ranch dressing.
