Make the Dough
In a large mixing bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until foamy. Add milk, melted butter, salt, and flour. Knead until smooth. Let rise in a warm place for 1 hour.

Prepare the Shrimp Étouffée
In a skillet, melt 2 tablespoons of butter over medium heat. Add onion, bell pepper, celery, and garlic. Sauté until soft. Add shrimp, cajun seasoning, and chicken broth. Simmer for 5 minutes. Stir in flour to thicken. Let cool.

Assemble the Pistolette
Once the dough has risen, punch it down and divide it into small balls. Flatten each ball, add a spoonful of shrimp étouffée in the center, and fold the dough over to seal. Let them rest for 20 minutes.

Fry the Pistolette
In a deep pot, heat vegetable oil to 350°F (175°C). Fry the stuffed rolls until golden brown, about 3-4 minutes per side. Drain on paper towels.
