Hushpuppies
Method
Preparation
- 1
Mix Dry Ingredients
In a large mixing bowl, combine the cornmeal, flour, baking powder, salt, and sugar. Whisk until well mixed.
- 2
Add Wet Ingredients
In a separate bowl, whisk together the buttermilk and egg. Add the finely chopped onion. Pour this mixture into the dry ingredients and stir until just combined. Do not overmix; the batter should be lumpy.
- 3
Heat Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
- 4
Fry Hushpuppies
Using a spoon or small ice cream scoop, carefully drop spoonfuls of batter into the hot oil. Fry in batches, making sure not to overcrowd the pan. Cook for about 2-3 minutes on each side, or until golden brown.
- 5
Drain and Serve
Remove the hushpuppies from the oil and let them drain on paper towels. Serve warm with Mexican butter.
