    Cook the Boudin

    Grill the boudin sausage over medium heat for about 10-15 minutes, turning occasionally, until heated through and slightly crispy on the outside. Remove from grill and let cool slightly before slicing.

    Prepare the Quesadilla Filling

    In a bowl, combine the sliced boudin, shredded mozzarella cheese, and chopped green onions. Mix well to ensure even distribution.

    Assemble the Quesadillas

    Heat a skillet over medium heat and melt 1 tablespoon of butter. Place one tortilla in the skillet, add half of the boudin mixture on one half of the tortilla, then fold the other half over. Cook for 3-4 minutes until golden brown. Flip and cook for another 3-4 minutes until the cheese is melted and the tortilla is crispy.

    Repeat and Serve

    Remove the quesadilla from the skillet and repeat the process with the remaining ingredients. Cut into wedges and serve with guacamole, pico de gallo, and jalapeno ranch on the side.
