    Prepare the Tomatoes

    Slice the green tomatoes into 1/2 inch thick slices. Sprinkle both sides with salt and let them sit for about 10 minutes to draw out excess moisture.

    Prepare the Breading

    In one bowl, mix together the cornmeal, flour, black pepper, and cayenne pepper. In another bowl, pour in the buttermilk.

    Bread the Tomatoes

    Dredge each tomato slice in the flour mixture, then dip in buttermilk, and finally coat with the cornmeal mixture, pressing lightly to adhere.

    Fry the Tomatoes

    In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the breaded tomato slices in batches, frying for about 3-4 minutes per side or until golden brown. Remove and drain on paper towels.

    Make the Creamy Bacon Sauce

    In a skillet, cook the bacon until crispy. Remove from skillet, crumble, and set aside. In the bacon drippings, mix in the mayonnaise and chopped green onions over low heat until combined. Stir in the crumbled bacon.

    Serve the fried green tomatoes hot, drizzled with the creamy bacon sauce.
