    Rinse the alligator tail meat under cold water and pat dry with paper towels. Cut into bite-sized pieces.

    In a skillet, heat the olive oil over medium-high heat. Add the seasoned alligator pieces and cook for about 4-5 minutes, turning frequently, until the meat is cooked through and has a blackened crust.

    While the alligator is cooking, warm the tortillas in a separate pan or microwave until soft and pliable.
