Prepare the Potatoes

Wash and peel the russet potatoes. Cut them into thin strips to form fries.

Soak the Fries

Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch.

Make the Aioli

In a blender, combine the garlic cloves, egg yolk, lemon juice, mustard, and a pinch of salt. Blend until smooth. Slowly drizzle in vegetable oil while blending until the mixture thickens. Adjust seasoning to taste.

Heat the Oil

In a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Potatoes

Drain and pat the soaked fries dry. Carefully add them to the hot oil in batches, frying until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels.

Season the Fries

Sprinkle the hot fries with salt and drizzle with white vinegar while they are still hot.

Serve

Serve the fries hot with aioli and ketchup on the side.
