Tamarind Tofu/duck Recipe

Prepare the Tofu or Duck
If using tofu, press it to remove excess moisture and cut into cubes. If using duck, slice it into bite-sized pieces.

Fry the Protein
In a large pan, heat 2 tablespoons of vegetable oil over medium-high heat. Add the tofu or duck and fry until golden brown (about 5-7 minutes). Remove and set aside.

Add Vegetables and Sauce
Add the pineapple chunks, bell peppers, tomatoes, and snow peas to the pan. Stir-fry for another 3-4 minutes. In a small bowl, mix tamarind paste, soy sauce, and sugar; pour over the vegetables.

Combine and Serve
Add the fried tofu or duck back into the pan and toss everything together until well coated with the sauce. Garnish with chopped scallions. Serve hot.
