Prepare the Ingredients
Clean and cut the duck or shrimp into bite-sized pieces. Slice the bell pepper and zucchini, and set aside the snow peas.

Cook the Protein
In a large pan, heat a tablespoon of oil over medium heat. Add the duck or shrimp and sauté until cooked through. Remove from the pan and set aside.

Make the Curry Sauce
In the same pan, add the Choo Chee curry paste and stir-fry for about 1-2 minutes until fragrant. Gradually add the coconut milk while stirring to combine.

Add Aromatics and Vegetables
Tear the kaffir lime leaves into pieces and add them to the curry. Then, add the sliced bell pepper, zucchini, and snow peas. Stir well and let it simmer for about 5 minutes.

Combine and Finish
Return the cooked duck or shrimp to the pan. Add fish sauce and palm sugar, stirring to combine. Allow to simmer for an additional 3-4 minutes. Lastly, stir in the sweet basil leaves just before serving.

Serve hot over steamed rice or noodles, garnished with additional basil if desired.
