Prepare the Noodles

Soak the rice noodles in warm water for about 30 minutes or until softened. Drain and set aside.

Make the Sauce

In a small bowl, mix soy sauce, fish sauce, lime juice, brown sugar, and chili powder. Stir well and set aside.

Cook the Shrimp

In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the shrimp and cook until pink and opaque, about 3-4 minutes. Remove the shrimp and set aside.

Scramble the Eggs

In the same skillet, add another tablespoon of oil and crack the eggs directly into the pan. Scramble until fully cooked, then push to one side of the pan.

Stir-Fry the Noodles

Add the soaked rice noodles to the skillet. Pour the sauce over the noodles and toss to combine. Stir-fry for about 3-5 minutes until heated through.

Combine Ingredients

Add the cooked shrimp, bean sprouts, and scallions to the noodles. Toss everything together and cook for an additional 2 minutes.

Serve

Serve hot, garnished with ground peanuts and additional lime wedges if desired.
