    Prepare the Noodles

    Soak the thin rice noodles in hot water for about 10-15 minutes, or until they are soft. Drain and set aside.

    Prep the Vegetables

    Julienne the carrot and chop the scallions. Set aside.

    Cook the Seafood

    In a large pan or wok, heat the vegetable oil over medium-high heat. Add the mixed seafood and stir-fry for about 3-4 minutes until cooked through. Remove from the pan and set aside.

    Scramble the Eggs

    In the same pan, crack the eggs and scramble them until fully cooked. Remove and set aside with the seafood.

    Stir-Fry the Noodles

    Add the soaked rice noodles to the pan. Stir-fry for 2 minutes, then add the carrots, bean sprouts, scallions, and cooked seafood. Stir to combine.

    Add Sri Ra-Cha Sauce

    Pour the Sri Ra-Cha sauce over the noodles and mix well. Season with salt and pepper to taste.

    Serve

    Serve hot, garnished with additional scallions if desired.
