Prepare the Ingredients
Slice the chicken (or beef/pork) into bite-sized pieces. Slice the mushrooms and green bell pepper, and trim the string beans. Quarter the Thai eggplant.

Cook the Protein
In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the sliced chicken (or beef/pork) and sauté until cooked through, about 5-7 minutes.

Add Curry Paste
Stir in the Thai red curry paste and cook for 1-2 minutes until fragrant.

Incorporate Coconut Milk
Pour in the coconut milk and bring to a simmer.

Final Touches
Stir in the fish sauce, sugar, and fresh basil leaves. Cook for an additional 2 minutes and adjust seasoning if needed.

Remove from heat and serve hot with steamed rice.
